"Ham and Swiss on Rye" written as a Parallelismus Membrorum, often used for short proverbs, but I have managed to use it to write a story in 37 lines.

"The Alphabet of Our Love" written in Alpha Beta, a poem in which each line begins with a consecutive letter of the alphabet
"I Was Not There" written in Free Verse
Couplet Chain ~ a series of open and closed rhyming couplets
"The Way Up" written as a 23-line Daisy Chain - a poem in which the last word of each line appears as the first word of the next line.
Chain of Abolition - a 22-line poem with an increasing stanza length and an external rhyme scheme with an interesting twist
